Now that Sion is cool, who takes first place in "Most outdated champion in the league?"

Well, the title is quite self-explanatory.
I'm not talking about "who gets next update" , as that is something that involves resources and pipelines and "what's already under construction". But! here are my possible candidates for a next VU/Relaunch.
#Taric , the Gem Knight Taric Pizza feet, awkward geometry and proportions, and a kit that, rather than being simple, is just a massive buff for your team or debuff for the enemy team (with a stun). #Cho'Gath, the Terror of the Void Chogath
He's getting a splash art in the pbe , but he is another old champion that needs whole lotta love(tm). I must say, it's kit is still in a good shape, and compliments his "giant Godzilla monster" theme. But he has quite an old model, few Voice lines, and his movement and attack animation are quite awkward.
#Urgot , the Headsman's Pride Urgot
Again, I don't feel his kit is really that bad, but graphic-wise he is quite old, and honestly he doesn't deliver his theme of "fallen executioner" . He's alright in his niche tho. Plus, new Sion taunts him.

Other low priority champion that also suffer from old models or awkward geometry . Malzahar Swain both have the issue of "plated robes", which means their clothes are harder than Malphite's Skull embedded in Braum's shield. Kassadin Morgana have some weird geometry with their squared skirts.

Taric is probably next given how much they've been talking about him.

I can't wait for them to remove yet another less serious character and give us Taric: The Freljord True Ice Knight.

Frozen by Lissandra along with half the other champions in league, Taric shattered his icy prison and made a suit of True Ice armor. Now he travels runeterra determined to shatter all the ice that exists because he's so mad at ice.

I'd say Urgot and then Zilean (though he is played a lot, his kit is nonsence)

I think the one right next to Sion for most outdated artwise are: Taric and Poppy

followed closely by: Amumu Cho'gath Mordekaiser Evelyn Tristana Pantheon Singed Warwick

Then:

Rumble Ryze Veigar Kog'maw Udyr Ezreal Jax

To talk less about who's the most outdated champ now that Sion's been dealt with (IMO its Nunu Nunu and the derp-yeti Willump) and instead about who's likely to get a VU next, what Ironstylus said in the Q&A holds true, too many huge VU projects and they'll end up driving themselves insane, and have an overall slower work flow. I mean, Sion's only the fourth champ this year with a full VU that redid everything. So what's next for them will likely be smaller scope.

Immediately this rules out guys with gameplay problems like Urgot Urgot, Shaco Shaco and Poppy Poppy, who not only have outdated models and VO, but also inherent kit issues they'd want to address with the VU.

It also rules out folks like Chogath Cho'Gath, who will likely have a TON of work to be done in terms of visuals to make them as amazing as possible (I mean Cho'Gath could have a growing, developing body and stuff. That would take a ton of time).

So the likely candidates for a lower scope VU would be guys who's theme is solid, the kits are fine, who's lore doesn't need much changed, but still absolutely need a VU. This can mean quite a few folks are possibly coming soon:

  • NunuNunu

I think we can all agree, he needs some work. Willump thumps around like a derpy gorilla, and Nunu's barely visually acknowledgable as an actual part of him, despite being the brains behind the duo.

Love him or hate him, he's got sticks for legs and barely anything going on animation wise.

Those painted on eyes are gonna have to go at some point. Also she has Teemo legs.

One of League's most iconic characters still suffers from pizza feet. Lets also say, his magic is nothing like in his lore. What's he use in game? lightning. What does he use in the lore? Thorns magic. WHAT IS THIS I DON'T EVEN KNOW GAH!!!

Another iconic champ, an all time favorite who's gonna need some lore attention now that the League's not a thing, there's so much they can do with Jax. They're gonna have to be careful with that turret whacking noise though, cuz people LOVE that noise.

He's strange to me because even though he's bare bones in a lot of ways, his thematic means he just about gets away with it. But on a VFX side, considering how different pre-vu and post-vu Karthus are, there's a tonne that can be done with Fiddle here.

Veigar will need a bit more love than most because he's more black-mage rip off and less Yordle. He needs more Yordleness too him. Yordleness is now a word. Deal with it.

The list goes on. I just described a few, and all of them are beta champs. There's still quite a few post-release champs that need some visual work, and are also pretty low scope. Kennen, Akali, Shen, Gragas, Ezreal, Pantheon, so many! But something to keep in mind for the next champion VU:

It's likely gonna be low scope, considering how high scope re-doing Sion was.

Taric is probably the most outdated model, but damn do I love that guy, and I worry about the changes to his model ruining some of his ridiculous charm. Same with Mundo.

Maybe Zilean? My secret pipe dream for a Zilean rework is that they will literally go back to his original concept and make him a grandfather clock with arms and legs. At least for a skin.

Warwick and Alistar. Alistar has huge nips, an unattractive hunchback, and his head is literally connected to his chest. Warwick has outdated splash art and his model looks outdated. Also Warwick's model doesn't make him appear to be the fearsome werewolf that he is.

Hmm, my top 5 would be; Singed>Morgana>Taric>Teemo>Kassadin. They look pretty badly, in my opinion.

Kassadin has the most potential to be extremely badass. If they ever make his daughter as a Champion I'd hope they would synch up their releases. I want Kassadin's model to be more sleek and streamlined. If he's gonna have a robe/cloak give him some fashion sense. Make his horns/tubes smaller, and make him a consistent purple

I put my money on Warwick the most, since his kit is mostly ready and tested according to some red whom name I cannot remember xD so it would only need the art team to step up, plus with recent changes to Soraka, the lore team can chime in as well!

Singed and fiddlesticks would be next though I couldn't say in which order but I'm sure these 2 could be finished before the year ends and both are pretty low risk with heavily defined concepts already.

afterwards and for next year I'd say they'll tackle on Poppy, then 2 more low risks like Kassadin and Malphite, then Shaco and then a HUGE Taric VU

I'm on board with Taric, As long as they don't botch it with stereotypical BS, Fiddle also need a full rework to his kit and a VU,

Morganna will probably take a while, They seem to want her and Kayle to be reworked together,

I remember a Rioter putting up a huge Poppy feedback thread not too long ago, so I'm assuming they're gearing up for at least some changes for her relatively soon; not sure if she's next but I'm hoping at least for some art changes soon

Taric , definitely.

His kit just lacks effectiveness nowdays, and his model is incredibly old (Being one of the few champions that still has Pizza Feet).

Urgot 's problem is less that he's outdated and more that he was shipped broken to begin with. While his kit has an interesting direction, it lacks the tools to fully realize his power, and his ult is incongruous with the rest of his skillset.

Yeah I think mordekaiser needs an update more than anyone. His speed, abilities, everything is screwed up. Taric is a close second but they've messed with his kit so much I'm sure morde deserves it more.

We can rule out poppy because riot said they wanted to stagger major reworks with minor ones. I'd love to see some Shaco love.

I have a strong feeling the next two in line for a VU and Rework are Poppy and Warwick, maybe in that order. Those are the two I've seen them talking about the most, even while Sion was still in the oven baking.

Not sure what they have planned for Poppy exactly (all I know is I think they're only going to keep her charge thing because its cool and trash everything else), but I know they've already been testing new kits/abilities for Warwick, particularly a sort of "pounce" that makes it so he jumps forward, slows enemies hit, then jumps back.

After those two, then next up I would assume would be Urgot, Zilean, then the others you mentioned in your post, in varying orders.

Nunu looks funky. He's probably not at the top of the "NEEDS UPDATE NAO" list, but I still think he looks funky.

I'm not sure Taric was ever intended to be a joke. The fans do have a habit of coming up with bizarre headcanon. His lore seemed serious enough. I don't think they'll make Rammus serious, and I wouldn't be surprised if they kept Morgana's Sinful Succulence.
