what would the opinion of champs be when they see like their allied minions die and stuff right in front of them? Like for example, what would quinn's opinion be seeing those minions just charge into battle and die etc? Any sort of guilt or sorry?

I mentioned before that I believe that minions are magical constructs, as such there wouldn't really be any need to feel bad about their deaths because it would mostly be just dissipating magic.
However, if you think that minions are flesh and blood, there might be some remorse. Similar to how a general would feel about losing his troops a (compassionate) champion would feel bad for sending them to their deaths even if it were necessary.
