She has very dark brown hair whereas in game she has red hair.

Why is this the case?

Probably just a color palette choice considering the water color art style and the high amounts of red and orange already present throughout all of the flame soaked sequences. Also if you watch when she becomes enraged her hair does seem to take on a more reddish hue.

I like to believe it's a subtle nudge to a VGU coming sometime this year.

It could just be due to the color saturations in the imagery. Compared to the flames and pyromancy effects it needed to be different somehow?
