Is there any connection between Ascendants and Vastaya?
I know that their origins are different, but to the average person, they are walking animal people that live longer than humans and have super strength.

Not as far as I know.
They are like fishes and dolphins. Similar appearances, different origins.
I think you may have kind of answered your own question.
As far as I can see, Vestaya and Ascended are not linked, and the only link I would be able to see is if the people prior to being Ascended possibly had a bit of Vastaya blood in them and that's why the animal they combine with, is what it is. But even then, I don't find that likely.
Vestaya seem to be natural to the world for the most part. A cross breeding of 2 different creatures to create new forms of this creature. Where as Ascended are magically enhanced by the power of the Sun.
But that does leave the question of what would happen to a Vestaya if they were Ascended? And also what particular kind of Vestaya, ones like Ahri, ones like the pig-man, or ones like the otter-people.
Ascended are products of concentrated cosmic energies and magic that only something like the Sun Disc of Shurima was able to accomplish with the help of a complex ritual performed by skilled sorcerers and priests.
What happened in Ionia is more natural and starts with the hybridization of humans and the native Spirits (not in the acception ghosts but as supernatural creatures) of which Ionia is full because of it's nature as a land where the Natural magic of the world flows and permeates each and every being.
