The vastaya don't seem to be oppressed or anything like that. Or is she just an edgy rebel for the sake of being an edgy rebel?

Rebelling against mankind's abuse of magic. Vastayans need magic like humans need water. It's like if squirrels became sentient and hunted humans for chopping down trees. But she's partly edgy too.
Did you read the story for them? Ionia is literally stealing all their magic from them.
Have you read her color text? There are Vastaya that are being repressed.
And their homes are being drained of magic.

The magic harvesting
While edginess has something to do with it, Ionia being asses and stealing/ensnaring magic from the Vastaya sure does give a reason.
Ionians steals vastayans magic powers, and in Xayah's quote when taunting an Ionian ennemy champ, she says "U encaged us" or something like that, seems that Ionians are not peaceful than they pretend to be.
