Alistar,The Minotaur just seems out of place with such vibrant titles such as "The Virtuoso, The Wandering Caretaker. The Shield Of Valoran"

Technical point: an epitaph is a short text remembering a dead person.
Personally, I don't think "The Minotaur" is a bad title, and if we were to change it, I would keep the word "Minotaur" in the new title, like "Alistar, the Unbroken Minotaur," or some such.
To be fair, Alistar is among those original champions who received such illustrious titles as "The Sad Mummy," "The Frost Archer," "The Revered Inventor," "The Sinister Blade," and "The Swift Scout." Riot has gotten more creative over the years both out of greater self-awareness and necessity in distinguishing the sheer number of playable champions.
The resilient fugitive?
The Great Unchained Minotaur sounds good. Currently, the Minotaur seems pretty dull to me. Like what if they called Garen "the Person", or Anivia "the Ice Bird".
