Considering the fact that Evelynn feeds on the torment and suffering of countless people for her daily bread. I initially thought she would say something like:

From her story we see Ev is very very selective of her victims. She only wants the people who she can help experience absolute despair despite their lives being great.
Perhaps this is when Ev realized she can create a continuous despair in people by having them witness the despair she creates for her initial victims.
