I think someone hired Evelynn to kill Vayne's parents. Her parents had traveled the world and were super rich so they probably got some enemies or something. She's an assassin for hire with her most recent lore and it might stay like that.
Anyone could have hired Evelynn to kill Vayne's parents.

Seriously though if they were anything like vayne in terms of attitude/arrogance eve likely killed them for their arrogance, they arrogantly claim that they can kill or she cannot kill them i could see eve doing so just to make a point, i do it all the time in games vs cocky players bragging in /all chat.
