I would say that depends on how they propagate. It's possible there are multiple void species, but it's also possible that each void creature is of the same species. The Void has strange and volatile magics, perhaps when new void creatures are made their physical and mental traits are determined not by the parents, but by the Void itself.
I gotta point out a couple things here. One, Malzahar can summon voidlings. It says they're summoned, not created, so they exist as a species in the Void. Or he's drawing from a concept like Rebonack said because that's awesome, but even then it implies concepts can be repeatedly given form. Second, and I think the thing everyone is missing here, Rek'sai is the queen of the Xer'sai. Am I the only one who noticed the suffix is the same on both of those? I don't think that's just "oh hey this'll sound cool". It sounds like a naming convention associated with species. Rek being their first name and Sai being a surname drawn from her species, the Xer'sai. Seems to me then that it's plausible for there to be other something-Gaths and something-Maws and something-Zixes and something-Kozes and all that :p
I like to imagine that each Voidborn is little more than a material echo of a being that exists out in the Void. Beings that are so incomprehensible and alien that the very laws of reality rebel against their existence if they tried to actually be in Runeterra. So instead of coming in person, they create these lesser avatars for the purpose of warping physical reality into a form more hospitable to their eventual coming.
So Koggy's daddy would, quite literally, be the concept that Koggy represents on a far more vast and far more terrifying scale.
The void was a place where magic twisted and contorted itself until vile monstrosities were born from it. They are eldritch horrors, they shouldn't be able to reproduce.
My best guess is that a bunch of the void creatures started running in packs and the xersai are how one of the packs identify themselves.
I wouldn't expect many of the same voidborn. Voidborn always feel like perversions of life to me. Like an otherworldly entity looking upon creatures of Runeterra and creating his own 'improved' versions of them.
Well rek sai's passive says fury of xer'sai which means there is only one xer sai since it doesn't say fury of THE XER SAI SO XER SAI MIGHT ACTUALLY BE THE VOID KING and not a race
Kah'Zix evolves by eating other things, which would mean others with the same trait wouldn't necessarily be at all similar, even if they belonged to the same "race". The Void seems like a complicated place, speciation of groups could be a more complicated matter there than we are used to.
It is possible they propagate in an asexual manner and gain traits in other ways; maybe others of the "Xer'Sai species", if that is a thing, are lesser spawn from the Xer'Sai we know, or spawned from the same source.
The nature of some void creatures lets a space for a sort of Brood-mother Zerg-like kind of monster. Also Malzahar summons a lot of voidlings :P
from what i heard from other posters, riot said that each void creature is unique, thus there can only be one xer'sai
