So, there are a few problems that need to be addressed here - none particularly big, but still enough to point out.
First and foremost, if you want to discuss something, such as Riot and their stance in regards to low-key offenses such as "GG ez", you should probably start the thread off by talking about that subject.
As it stands, your thread opens with an opinion and the challenge "change my mind" - this isn't conducive to good discussion, and more often than not, when someone challenges others to "change (their) mind", that person has already decided their opinion and doesn't actually want it changed, they just want to agitate people whose opinions differ.
And, while that may not be the case here, it's still something that hinders productive discussion more than it helps.
Additionally, while it's alright to have an opinion, and even a strong attachment to that opinion, it isn't alright to shut out people who have differing opinions.
You may feel that "GG ez" is more offensive than hate speech (albeit you've shown it's not that it's more offensive, but the fact that it's regarded as inoffensive that you don't like), but you should at least try to see from other people's perspectives when they approach you with their own thoughts.
The Boards Universal Rules and Player Behavior Rules both call to avoid low-effort posts which intend to bait out conversation or hold no real discussion value. While the main post here itself generally fits that description, there is still some discussion value here, as shown in one of the comment strings.
As such, I'd just like to remind that, if you want to discuss something, you should try to discuss it openly instead of challenging people to "change your mind", and that it's one thing to have an opinion, but there's no point to opening a discussion if you're not going to hear others out.

Your claim that "gg ez" is de facto the universally most offensive thing I can say is incorrect, because this implies it's offensive to the most number of people. I feel fairly confident in my assumption that there are other words or phrases that more people find offensive.
Your statement should read, "'gg ez' is THE most offensive thing you can say, [to me], in this game."
From there we can conclude that you are likely correct. It's unlikely that you know yourself perfectly, but you've likely a better understanding of what upsets you than us, so it's unlikely anyone will change your mind.

Not the most offensive thing. Unsportsmanlike behaviour, but that's about it.
In my honest opinion, saying "GG" when you win, instead of waiting for the enemy to say it first, is unsportsmanlike behaviour too. It should be the losing team to say "gg" first. If they don't, it's equally unsportsmanlike.
This is something that really grinds my gears in E-sports culture. It's always the winning team that goes shake hands (ie "gg"), but it should be the opposite. In some games - Starcraft 2, Chess, Warcraft 3 - the enemy player says "gg" and surrenders the game. It's not the winning party that has the incentive.
Riot doesn't even deem it as an offensive term as you can't get banned by saying just that. On top of this any slur is far more offensive than saying that the video game they just played was easy, unless of course you have that fragile an ego, that the mere thought of someone saying you were ez to beat just shatters your world in which case there is nothing we can say to change you mind.

It can also be funny. Like after a 52min summoner's rift game, with lots of back and forth. In that case, "gg ez" is sarcastic - as in, NOT easy.

Telling someone to end their life, or wishing cancer on their mother... that's the most offensive.
Think you shouldn't be using the internet if your skin is that thin. If you think the lowest of low effort jabs is the most offensive thing period, you might need to reevaluate your priorities
Passive aggressive flaming bothers me more than "zero tolerance" flaming too. Riot doesn't care, they have Mods, and Mods are passive aggressive as Hell.
It's not what's being said, it's what's being implied. And a person trying to insult me through implications because they lack the courage to speak their minds bothers me a lot more than someone that can truthfully express their frustrations.
"gg ez" implies the message: "you're trash" "why?" implies the message: "you're trash" "ff at 15" implies the message: "you're trash" "this team" implies the message: "you're trash" "report player" implies the message: "you're trash"
Like you got something to say then fucking say it. Hiding behind a keyboard and still don't have the courage to say what you're really thinking? Reply to them with "stfu you're doing shitty" and they want to cry and ask everyone for reports.
I'd much rather someone say, "you're trash".
And it's more offensive because Riot enables this toxic shit.
And as far as "zero tolerance" words, it's just sad to take offense to someone who is clearly just hurt about something. If someone is blatantly trying to insult you, and you sit there reading every word then it's your fault for not muting the player. If it's reasonable that I can't tell someone to "stfu you're doing shitty" because I can just MuTe AnD mOvE oN, then the same logic needs to apply for all people getting offended, and the entire report system just becomes a charade.
If someone is flaming, they don't reserve the right to be offended or abuse the report system to seek punishment against the people they're intentionally griefing. Simple solution: If a Player uses the report function, ignore the report if that player is also guilty of breaking rules. The report system is dysfunctional.

I just got banned from the forums for 24 hours from this thread by making the point that there are people like me who use threads like this as fuel to keep doing it. I am not sorry at all. You are going to have to perma ban me from the forums on all of my accounts if you want it to stop. I said nothing offensive.
Now that this is out of the way, making threads like this is absolutely pointless. You are only making it worse on yourself as you are telling everyone what bothers you. When you do that, they will resort to using it against you. If you want to make a public thread about people hurting your feelings with specific insults/quotes, you need to just ask if it is punishable. Perhaps even request it. Even doing that will make people want to use it against you, but it isn't nearly as bad as just going around and whining about how offensive it is or how hurt you are. You are just throwing gasoline on the fire.
