What is it with video games and a "hallucination stage" ?

Seen this in Far Cry 3 and 4, Devil may Cry:DMC, GTA V, Saints Row, Dying Light. Any ideas why it's slowly becoming a popular thing?

I think it's because the visuals have come along in a way that makes these depictions fun to craft. It seems to me like developers have a great time writing and coding these parts of a game, and they come out pretty well. I agree with you that it's overdone lately, but each one (that I have seen) would be cool in a vacuum.

I'm guessing (based off of the dream level in Dishonored) that designers use it as a way to make more content that doesn't have to fit the over all story or even art theme of the rest of the game.

Oh, I thought you were talking about the way you play a video game for so long and so intensely that you start hallucinating aspects of the game into real life. Man, disappointing.

I guess I'm the only one that happens to.

It's not exactly new, but like CyanoPirate said, it's probably a way for developers to have fun and get away from the hyperrealistic stuff so many games use now.

Well, Psychonauts would never have existed if the studio allowed a peyote trip in the developers previous game. He then made this game with that trip in mind, and that turned out epic. Now, since that happened so wildly successfully, more studios are open to the idea as it allows more creativity on the side of the developers.
