I play Leona and Morg heavily in bot lane. If one won't work, I use the other. Basically all I need for most matchups. Either I am tanky and shove my lady-balls in your face or I am gonna snare and harass you all day while I shield your skills.
Don't worry about countering too much. Learn one champ really well and learn it's counters. Then learn one champ that handles those counters pretty well and learn that. Learn 2 champs in whatever roles you play to really keep it simple and stay effective. Expand after that.

I just play whatever I was playing anyway, unless it's pretty much an unwinnable lane. Countering doesn't matter much in low ELO
I don't take countering very serious. I play mainly 
and I have had only one time when a champion actually countered me.
I've learned not to take clear cut counters seriously because these people. Most of the time, it's just an idiot who heard, "X counters Y" and jumped right into it instead of understanding why this is the case.
