Then, you know, pick your champions situationally in response to what the other team has drafted at the current time? If you don't know what they've picked because you're first pick, then pick something that isn't as easy to counter.

Play Kalista in the jungle. Try and make it work.
Consider buying a thornmail and other armmor anti AA Items. You don't need to kill Kalista so much as run her off.
Frozen Heart/Randuin's Omen works wonders against Kalista.
