Post-game Stats
There are a few more stats I think would be very useful to many summoners, here they are:
Pets killed: Would solve the issue of padded "minions slain" and give a good idea of how efficient one is at being a pet killer.
Self-Healing: For clarity's sake, healing done by the Heal spell, life-steal/spell vamp, and healing packs where applicable to allow actual "heal-other" stats to be displayed with specificity.
Trinket's used: Because it's just nice to see how you compared to the enemy's use of trinkets.
Neutral Monster Buff Duration Total (probably shortened somehow): Because double-buff transfer is a thing. Hail

Time spent AFK: If a player is missing from the game for a short duration but is ahead by a lot, this is never adequately reflected in the post-game stats. There's no way of seeing exactly why a team failed to lose even though on paper it looks as though they won.
