Making a LOL Team - Assignated roles?

I was lurking the Team recruitement board and I noticed people are looking for specific roles to fill in a team.

Why its like that? as a LOL player, should you try a variety of roles to fullfill?

Me, I lie to use the champs I own in various ways if possible. While I master Garren, he will only be useful at top lane. However, Im ready to learn how to use Galio as Mid AND support for exemple.

Playing teh same role over and over is boring so why people are looking for specific lane masters, instead of people who master specific champs?

Pretty much no one can master all 5 roles, best you can do is generally be proficient in all 5 roles, skilled in 3 of those roles, and excel in 1-2 of those roles. There are a lot of champs and nuances. That's not to say you can't be an amazing challenger level player in all 5 roles, it just means that when you compare your own play with yourself you'll always have some areas that are stronger. It's important to know how to play all 5 roles but it's also important to focus on 2 or 3 more than the others.

When you're playing as an organized team everyone having their roles and learning to mesh together with those roles is important, having that synergy and understanding where you need to be and how the guy next to you plays is important. I play support to an ADC atm on my other account and we're good about knowing what the other is doing and wants, when we swap roles though disaster...absolute disaster.
