Better all-in ADC
Jinx or Vayne? Which one does better when a full-fight breaks out and they get collapsed on? I'd wager Vayne, but I've seen Jinx pull out better. What build should I use for each? (those are my top 2 picks for serious adc)

You're asking two different things:
Vayne is better "All In", in that she has one of the strongest lane game potential. Her %HP and true damage means she'll shred anyone who steps up to her. Vayne has higher sustained mobility through her short CD tumble.
Jinx, on the other hand, has better actual escapes. If she ends up in a disadvantageous position, she has tools to get out. She has her long-range slow, her AoE snare, and her passive speed boost if she manages a kill. However, her CC is unreliable (skill shots and the snares have a delay) whereas Vayne has a targeted knockback.
What I'm getting is Graves>Vayne completely. Jinx=Graves. Ditch Vayne. Thing is Vayne was my first IP purchased ADC, Jinx was my first RP (that Jinx clip was too good). Kinda got settled with them. Just haven't touched Vayne in a long time. How should I build each? And is it worth my time to buy Trinity on Vayne to combo into her Tumble? Kinda related btw, been playing Sivir as mid caster. Is she good adc or does she push too hard? I'm just trying to find my fall backs. Thanks =). Mid/Supp/Jungle I got down. Working on my ADC, then top eventually.
Edit: I tried this build and got loads of damage and stealth up time. Any way to fix it a bit?

If you want all-ins, just bring Graves. If you want range with shit all ins, THEN you bring Jinx. k? k.
Vayne has 1 reposition, 1 knockback and 1 self peel.
Jinx has 1 sorta team root, AoE AA and 1 gigantic AoE blast.
So depends on what you like really. I would assuming Jinx is currently on the OP side of things due to her high both win and pick rate.
It depends on whether you can safely get a kill as Jinx and use her Passive to GTFOutta there.
I dare say Vayne probably has a better chance of holding her own until team mates can save her/back her up.
Depends on the phase of the game, what you got built, and so on and on.
Jinx can escape better if she gets a single kill, however really good Vayne players can use epic juke/escapes through the invisiblity of their ult and some bushes.
If you're skilled it shouldn't matter what adc you're playing.
"All-ins," or I assume you mean 5v5 team fights, in which case it comes down to positioning, timing, team comp, and skill.
Why the hell would you even think about Vayne if there's Graves? Enemy bot lane collapsed on me, I was Graves and I have just pressed W, Q and R (i panicked) and I don't have an Idea how did I got that double kill.
