I just want an AP bruiser build. I was thinking

item 3100 item 3089 item 3116 item 3143 item 3111 item 3194

Obviously I'd switch up the defensive items as needed based on the enemy comp, but just a general that was what I was thinking.

How would you go about it and what keystone would you take?

Doesnt only her ult scale off ap?

Also grabbing void staff over another AP item would probably give more damage.

You'd probably have to run Electrocute to make that work. Maybe Dark Harvest. I'd also switch out Rabadon's for Morello or Void Staff, since it might actually end up being more damage. And Rylai's seems...pointless. Only one ability of yours has no CC, and it's not the one you're going to use most frequently in a fight.

Also, consider item 3001. It's HP, mana, MR, CDR, and gives bonus magic damage. It's a fairly good first item if you're running a bruiser AP build.

I've found that an AD bruiser build works surprisingly well on her, however, since, despite her lack of AD scalings, she still has a fairly spammable AA reset and that build makes her tanky as fuck. item 3078 item 3748 as core items, get item 3053 and other bruiser-y items after. Slightly less damage with those two than before, since her R bonus AA damage was removed (and having titanic would let you proc that 3 times near-instantly), but still surprisingly high-damage. Max W in every single occasion, because it's just the best to max in all of them. I tend to run Grasp with that, because it gives more mixed damage (which is obviously harder to resist against), a bit of sustain, and can actually chunk decently hard since you build quite a bit of health in your first two items. Aftershock can work well as a more defensive option, but I tend to avoid it since you're already fairly covered defensively. I'd suggest against using Conqueror in ARAM since you're not wanting to stick around enough to stack it, but it might work in SR.
