Lately I’ve been finding League boring. I need something fun to play as I’m burnt out on a lot of champions. Just name some champions you find fun and maybe a reason why if you can, if you can recommend me a champion that’s fun, has some sort of skillcap (
not this guy) has some mobility and damage or even maybe a little cc it would help a lot!

A good start to your question would be is to tell us what kind of champions you play (by class or just the champions themself), to direct us to something similar of your playstyle.
Anyways, here is my suggestion: 
Talon is semi-mobile assassin with a lot of AoE burst damage. Even tho his kit is mechanically easy to play, he not that easy to master. His mobility comes mainly from buying 
or from dashing over walls (his E ability). As his CC however, he has only a slow on his W (If you manage to hit someone as the blades return). He also has a point and click dash (his Q) that can be used in 2 ways: a gap closer or to melee range "auto attack reset", the ability in melee range also crits so If you want to increase your damage try using Q in melee range. As for the rest, If you find Talon interesting from what I said, try him out in the Practice Tool, to learn how his passive works and whatnot. If you don't find this fun, it's fine It's only my suggestion...
It depends on whether you want a challenge from mastering a champion (GP, ASol, Bard, Ivern), from having a fun and satisfying kit (Zoe, Neeko, Kai'sa, Fiora, Ivern) or simply trying to chill and relax (Heimerdinger, Ivern, APMalphite)
Try kled. He's so bs that he's fun. Lacks innate mobility tho
