You had only 1 hp item. To maximize tankiness, you should have 4k hp and about 200-250 of each resist, or 300 armor if they have full ad team.
Because damage outscales defenses, as intended.
Defense is already stronger early mid game, if it was stronger late game too then there would be no point to play anything but tanks.
why shouldn't they win? They have better duelists, better tower shoving, better jungle clear speed.
Hell they've even got better engagement range and better disengage.

First off, Lethality scales off your enemy's level that you're targeting. The more lethality you have + the higher level of the enemy = you ignore that much armor and deal tons of damage. But lethality only works on champions that don't build any bonus armor in their inventory. An example would be

. Lethality is also more of a mid-late game rather than the old flat armor pent when you deal more damage if they had no bonus armor.
Notice how I keep using the term "bonus armor". Bonus Armor comes from armor items like
those kinds of items. Armor items are there to reduce the damage from Lethality or its effectiveness.
Secondly, your team did build a lot items, but there's a problem with the build. Your tanks lack the bonus health to survive.

As you can see from this build, I have 3 items that gives me a combine health 1500+ bonus health while having a total of 270 bonus armor. But why merc treads and Randuin's? Talon's Q can crit when he's up close and burst for damage and should Varus build any crit i can reduce the damage. Merc threads also allows me to reduce the stun duration from Udyr's bear stance, Talon's W slow duration and Varus's ult, which is an aoe snare.
And Third and lastly, J4, Udyr, Talon, and Varus, need to snowball to win the game. Very late game they scale poorly. And if they get their Lethality items by the time your team gets the chance to build any armor, then your team has no chance of winning. So if you're team lost since they didn't had their tanks items early, your team lost.

You built no health.
Jarvan would have built black cleaver, plus the armour reduction in his q. Basically stacking armour was flat out dumb because jarvan was reducing it by 40-60% (i can't be bothered to look up how his q stacks with black cleaver) which brought it in to range of lethality to destroy it, last whisper items were probably there to counter armour more, and you HAD NO HEALTH.
Not to mention that neither Morgana nor Volibear are tanks. Being a tank is about a lot more than building armor items. The CC to deny enemy damage uptime and defensive steroids are what matter. You had one tank (nautilus) and two champions that couldn't do their jobs because they built wrong (Morgana should have had something like zhonya's for sure, while Volibear should have cinderhulk/steraks/randuins/deadman's). Stacking frozen heart / thornmail / randuins was just dumb since J4/talon/varus are not auto attacking you much at all (and udyr is splitting likely so you needed someone that could waveclear and threaten him with damage). Lowering attack speed is great vs auto attackers, it's garbage against ad casters.
Without zhonyas Morgana probably died every time before her ult could proc, vayne died whenever she was in range of j4 and talon, Volibear and nautilus brought no damage while varus could safely Q from long range (to be fair varus is broken). Not sure who your mid laner was but you probably needed something like Ryze or azir being insanely fed to win with those builds.

ok. lets say, for the sake of argument, that you don't manage to protect the morgana and the vayne from the multiple champions on the other team that simply jump on and delete such squishie targets with "click on target to kill" burst damage spells (talon and j4).
what do you have for damage after that? What keeps udyr from just right clicking your tanks? Tank build Nautilus and Tank build volibear don't have anywhere near the damage output needed to compete with offensively built damage fundyr.
crappy no-hp build aside, this is a skill matchup. You are running a protect the vayne so without looking at the game I'd say your principle mode of failure is not managing to protect her from the obviously dive-and-delete heavy enemy comp.
Also, the both supports could have had a major impact here, which is not even alluded to.
vayne doesnt neeed lethality to shit tanks even faster
volibear falls of hard late game and varus poke is pretty op but even besides that they have a comp that can delete vayne fairly easy. Vayne is weak in 5v5 teamfights because it's hard for her to get in without people jumping on her which there entire team is good at.
Also who on your team built iceborn? and is it that vayne built iceborn/GA, morg built frozen heart, and you and voli got randuins and one of you got thornmail? Also you only have 4 champs on ech team who are the other 2? Did they have say a brand support or something that did 1 mill magic dmg and shit on the vayne so that she was weak and had no dmg?
It's not full lethality if they build black cleaver and LDR on top of it.

for every 100 armor you build you need at least another 1 k health to make roughly the best use out of the armor.
