Could be considered some what of a bruiser depending on the enemy team comp. His Grand master's might gives him a bonus to MR based on how much AP he has.

That said, I would argue that building more AP/AS would have made a better AP Bruiser and not building completely glass cannon. Nashor's, GunBlade, Devourer, etc.

Ezreal was created to be playable as both an ADC and Mage, Jax is simply a Bruiser that deals mixed damage.

Jax built full AP is not a bruiser. Thats like saying J4 build full AD is a tank, or full AP Amumu/Sej. With a full AP build, Jax does nearly entirely magic damage in short bursts, while being incredibly squishy - wow, almost like an assassin and not a bruiser!

Many champions can fit in multiple roles depending on how they build - Jax is one such champion (though, honestly, an AP build on him, while "viable," is pretty sub optimal, just as AP Ezreal was sub optimal before Runeglaive)

Bruiser as a term literally means a build that is 1-3 damage items then tank. "Fighter" might be a more appropriate term for what you are trying to say, given that "fighter" is Riot's catch-all term for melees that aren't tanks or assassins, but then again AP Jax is very much an assassin in both build and playstyle.
