As Voli your only hope is that another tank with a harder initiation goes in first (Vi, Malph, Sejuani), or you'd have to get a flank. Volibear isn't really a primary intiator, nor does he dive the backline particularly well without the enemy adc messing up their positioning. Come out of the fog of war right as a fight starts and you'll have better luck.
Pick another target. Or let someone else lock her down first. 1v1 you are screwed.
