Why Cant You Undo Purchases While Dead?
I accidentally bought a dorans ring while dead, but it wouldn't let me undo my purchase. What is the point of this?

The only time I recall encountering this is when I (my ability, damage, or something like that) am still involved in the map during death.
I can only assume, so I believe this happened when you played Syndra...your most recent game as I type this. You used ignite before you died, and as it does damage during your death, you bought a 
. The ignite damage register you as in-combat which considered you not eligible for refund.
Another similar, but unlikely case (due to needing a quick mouse speed to purchase an item), is you used your ultimate instead.
I KNOW this happens for Teemo, because you can't just buy an item during your death to unfairly increase large amount of AP just for your mushrooms. If someone set it off, you would be unable to refund anything as Teemo. Same for people tries to buy tank items very quickly for an incoming missile toward base.

Because you can Buy things while dead because the Shop Keeper lets you but he makes the FUN in No ReFUNds
if you do damage while dead it stops you from undoing
I think it's because your body is still technically not in base, and once you've left the healing pad after purchasing something, you can't go back and refund it.
got screwed over by this once, was running around as nidalee with infinity edge instead of rabadon because someone just happened to step on my trap so I couldn't undo the mistake
It usually happens because you're body/champion might technically still be in combat even after death since one of your abilities might currently be affecting someone whether through a DoT or CC.
this happens to me a lot... i never knew what caused it.
It's not a bug.
Some part of your kit was dealing damage to enemy units and as such no purchase can be undone.
It's especially troublesome on champions with traps (
) because once someone (including minions) triggers your trap you no longer can undo purchases (mind you - this makes perfect sense, and I don't expect it to be changed).
