Mostly for teambuilder stuff, but I've been playing veigar a lot and it's very hard for me to deal with Yasuo, Talon, LeBlanc, Katarina. Is there a basic fundamental I'm missing or is it just 'git gud, get more ganks from the jungle'. I hate the fact that I have to leave lane at 50% health and my jungler can't gank unless I land my stun PERFECTLY.

If you ask me, it's immobile mages who should get to have single target abilities on their kit. It's really dumb that there are some mages who are all skill shot and than assassins who are all pretty much single target
Seems like you need to stand back and accept you won't be owning in laning phase. Let them feel like they have you scared by not going past mid lane, if you farm right then you can get your cs without pushing the lane. The worst thing you can do is miss cs or give them easy kills. Even if you don't get kills on them early and just cs you should come out on top in mid to late game.
Play safe. CS when you can, be aware of when the enemy has used cooldowns, and poke when it is safe to do so. Since you're Veigar, you should be able to farm from range pretty safely (900 range on Q). Don't use your stun offensively, unless your jungle is ganking. If you're against an AD assassin (Talon, Yasuo, Zed) grab armor and rush Zhonyas. Against LB and Kat, your ult should do a ton of damage as long as you don't instantly die. Also be aware that your cage will not stop a Talon or Kat but will stop a LB or a Yasuo.
You need to know the specific matchups and not much people can say if you don't give them a specific champion that you are playing Ex.
Talon, katarina, fizz all have horrendous early game. Push hard (while warding so you know where the jg is) and deny them cs. Assassins love to roam so the more you push the more pressure they feel to defend tower and take potentially lost exp.
LeBlanc, Zed generally have extremely powerful and dominating laning phases. Play safe, try not to engage on them. If you don't die and keep them in lane they can't do much.
Of course assassins usually have really hard counters
