this game could be MUCH worse/infuriating to play than it already is. Feel lucky the listed ones aren't in every game

Actually, I would prefer the list of champs that you mentioned in the post, the tank meta was something where every champ was viable no matter what, and many different comps would work that revolve around the tank(s) doing more than just soaking up damage.
Personally yes, because against all of them (excluding talon), i can safely play a mage.
While i dont agree with the "scary" champions, I too am happy that it is Lee who is most popular, along with Ez and Lucian. None of them are really toxic., and they cant really suprise you anymore as well.
season 4 had Gragas/Kha'Zix/Rengar/Talon/Ziggs as popular picks and it was one of the most strategic seasons, especially near the end where they buffed ancient golem and Rammus was pick or ban.
I don't hate seeing any of them every game except Lee.

No brainer, yes Yes, because Shaco is a mind game champion. If you have a basic knowledge of his mind games you've got him halfway beat.
He'd get annoying with all those knockups, I'll grant you that.
