What happened to stun?

I remember a time where stun canceled movement and channels. Same for silence. Nowadays it seems like if the player can at least activate an ability .01 seconds or simultaneously as a stun lands, they’re ability still procs. For instance, I’ve seen trist start a jump, get hit with a stun, but still finish the jump...while stunned. Same for Ez ult. He pulls back the ult, gets stunned, but still releases it. Admittedly, I returned to league after not playing for five years, but this psuedo-stun is incredibly frustrating.

trist has always worked this way. you have to hit her with CC after she has left the ground. she has unstoppable while on the ground.

Ezreal is a blink and all blinks in the game work this way.

Stuns have never canceled dashes. Veigar's E, for example, stops dashes because that's an additional part of the ability rather than because it's a stun. The same is true for Ahri's E. Other than abilities specifically canceling dashes, the only other thing that stops a dash is a displacement effect, such as Blitz's E or Blitz's Q.

What you're describing is stopping casts, which is something that stuns have also never done. There are only two ways in this game to stop a cast (which is different from a channel) that is in progress. The first way is for the caster to die before the cast finishes. The second way is if the casted ability requires a target and that target becomes invalid through either untargetability or the caster losing vision of the target.

Happens if Jax E stuns an Ezreal but Ezreal E's out while stunned

I know the Jax stun lands in the Ezreal E buffer in this scenario and Ezreal is still stunned wherever he E'd to, but it sucks that the stun doesn't interrupt his ability to do that like a stun intuitively should

Edit: This is why you flash first to kite a Jax as Ezreal, E'ing out of the stun won't work
