How to play Taliyah mid when assassins control it?
Seems like I either get stuck against Kat, Akali, Zed, or Fizz when trying to play Taliyah mid... any advice?

Save W to push folks off. Fizz and alkali can be hit with the Stone triggers when they use Q or R on you respectively. Focus on csing, if they are good and your unable to harass them, consider grabbing a 
for kat zed or fizz. akali will be stickey and is less reliant on individual ability's to kill you so much as combining everything, but shes also the one who you can win lane vs easyer so bully her out of cs if you can. Also Look to other lanes, if your R will net kills roam, but this will be game to game and depend on comps. Ping mias.
You play another assassin or tank because Riot hates mages.
As other people mentioned, use W to push them away from you if they decide to dive. Also, against AP assassins, a little MR and then build into Banshee's is not a bad idea either.
Also, E is a pretty good deterrent against them as well. A W to push away into an E then Q would make them run away.
you don't play Taliyah mid to sit in midlane. I don't care who the opponent is. It makes little difference if it is an assassin or not as long as you are blowing your gold on some extra wards
