Besides Nasus and Gangplank who are some of the best/beneficial champions to farm with?

What do you mean by "Farming" champions? As in champions that have an infinite scaling (Nasus Veigar Sion), champions that generate more gold from farming (TwistedFate Gangplank), or simply late game scaling champions (like Twitch Vayne)?

Nasus gains his infinite Q stacks, Veigar can potentially have infinite AP from farming with his Q and from poking his lane opponent, and Sion generates infinite health from his W passive.

TF and GP both gain bonus gold for killing minions. Fate gets 1-6 bonus gold per kill, while Gangplank gets an amount of bonus gold depending on his Q level for any minions he kills with the Q (barrels count toward this) and also gains Silver Serpents, which he can spend to upgrade his ultimate.

Twitch and Vayne are 2 of the best examples of late game scaling crit ADCs. They can become among the best champions in the game, if you are given enough time to get them to late game. Even a bad Twitch or Vayne can carry even the worst of teams just as long as they can get their crit builds. While they are likely the best examples, they aren't the only examples, and ADCs aren't the only class that can be late game beasts. Ryze is a pretty good example of this, as he is probably the mage with the strongest late game scaling. I would recommend doing some research if you meant late game champions, but simply put, these guys have generally weak early games, but scale hard into the late game with items. Obviously, every champion scales well with items, but some champions don't scale as well into the teamfight phase of the game. For example, Akali has a pretty weak pre-6, especially in ranged matchups, but becomes a terrifying monster after level 6 into the mid game. She falls back apart in the late game, typically being able to kill only 1-2 squishy targets on the enemy team before dying, and that's if she can get past the tanks in the first place. Others have oppressively strong early games, but steadily see their power declining as the game progresses for similar reasons: they can't reach who they want to reach around tanks and can't even make a dent in who they can reach.

A bit of everthing to be honest. Even ones that just need to farm well, like karthus he won't really get kills and needs to farm well in order to buy his items.

I'm going to assume you also mean champions that are easy to farm with.

Shen You will never run out of mana (energy). His Q is low cooldown, AND if you're under tower, you will have 0 trouble last hitting.
