There's no list of "intermediate" champions because it's all purely subjective.
Most people can agree that champions like Garen, Annie, and Amumu have extremely simple, straightforward kits that are easy to understand and easy to use/master.
Most people can agree that champions like Riven, Lee Sin, and Yasuo have extremely difficult kits that require a high level of mastery of game mechanics, knowledge, and mastery of the champion itself along with high reaction times and manual dexterity. Most people are just incapable of playing champs like those at their full potential.
But what makes a champion "intermediate" is too subjective to be worth anything.

For example is full of himself if he's trying to push his opinion as fact. Most people would consider Vi one of the easiest junglers to play since she has a single skillshot, a passive as a skill, and a point-and-click ultimate that you can use to close the gap and use your skillshot at point-blank range with zero chance of the target dodging.
Considering the fact that Zoe's winrate starts at 44% at low elo and raises all the way up to 51% at high elo, she should most likely be considered an expert champion because of the difficulty of her kit.
Warwick is another jungler I'd personally consider one of the easiest to play since his kit is very straight forward, simple to use, and allows room for mistakes
Vayne, Akali, Zed, Aurelion Sol and evelynn are all also champs that I definitely wouldn't consider "Intermediate"
