Optimal Amount of Champions to play?
What do you guys think and why?
I think 1 for each role and 2 for your main roles is decent.

As many as possible. I have a mighty brain, so learning the mechanics and behaviors of 140 champions is a trivial concern.
for us commoners though...how many?
