All Champs Played in LCS Besides Illaoi?
Why is that? She's the one bruiser who can straight up 1v5 with a good Ulti into W + Q.

She's a juggernaut, a low-range champion that mostly feasts off of opponent mistakes, which LCS makes fewer of. Nobody would let her land a 5-man ult, and she'd honestly get buttraped for most of laning against many meta champions. And, lastly, she's one of the most recent champions released. That means that she's had less time for the meta to change to support her being professionally viable for a short time.
There are tons of champions who aren't played in the LCS, Illaoi isn't unique.
With her original kit, it took Poppy till season five to be played in the LCS (she was played in the EU summer challenger series in season 4 though). So it can take a while for some champions.
