Lately I've been getting an off again on again glitch where, unless you swap your skin before a match, it will load up the classic skin. So if I used Little Knight Amumu in my last match then played him again in the next, he will be in his classic skin.

Is this with teambuilder by any chance? If so this is a known issue - due to how teambuilder is built the code that works for normals doesn't work for TeamBuilder - and Riot will be working on a fix for this :-) As you've mentioned, a workaround is simply to change the skin then back (IE: to classic then to your selected skin) while in setup :-)
I have noticed this too, and yes it is in TeamBuilder.
I do hope Riot fixes this soon.
