So I was told that "any champion could go mid" and that "champions w/ burst fit into mid lane." So I wonder, how viable is it to have a 
Lee Sin going to mid lane? What advantage/disadvantage does he have compared to other mid-lane champions?

He wouldn't be totally useless but he's nowhere near top tier. There are champs who do what he could do better.

The key difference between lee mid compared to other assassins, is that his laning phase isn't that bad. (except zed, we won't talk about zed) So lee can transistion from early to mid game a lot more smoothly more consistently than other assassins.
