Hello there, I used to main eve jg in normals for many many games and I can give you a few building and ganking tips.
Building:
Now, the there are 3 items that you should always have built on evelynn jungle as those are:
1. Rangers Trailblazer, Stalkers Blade: Devourer
Most people will tell you to build warrior, I know, but after much experience I found that my win rate was higher with devourer than with warrior enchantment. I like devourer because my e - ravage applies its magic on hit effect. The attack speed with this enchantment and your e is also very strong because we'll have some ad too. I don't get magus because we'll be getting Rabadon's death cap and hextech gunblade, so we don't want too much ap over our ad. Make sure you switch to stalker's blade from trailblazer as it's just for farming before getting enchantment
2. Hextech Gunblade
There's not much to say here besides it's a must on any ap/ad hybrid champion, and the active effect can be very useful.
3. Rabadon's Deathcap
This item amplifies gunblade's ap in addition to its own, a very strong pick to up your ap for high damage q's.
(If you have a lot of ap on your team maybe consider getting Blade of the Ruined King over this item and just not get deathcap)
For boots you'll always want Boots of Mobility or Boots of Swiftness, pick want you want for that game depending on enemy champs.
Here are a few situational items to pick from for your last 2 items
1. Maw of Malmortius
This is a strong item against apcs and it gives you some ad to match with your ap from deathcap.
2. Thornmail
Against heavy ad
3. Warmog's Armor
If you need some hp against hybrid damage and have some nice boots of mobility to roam to the other side of the map after a fight while your hp is restoring
4. Blade of the Ruined King
If you're feeling lucky, got a tank or two, and like to glass cannon melee champion lolol (assuming you also got deathcap)
5. Inifinity Edge
If you got blade of the ruined king def get cuz now you're reking some noobs, otherwise you can get with an exclusively tank item like warmogs or thornmail, I've never gotten it with maw of malmortius though.
(this list is in no specific order)
6. The Bloodthirster
Easily a strong pick, but if you're not getting devourer enchantment like a noob, dont get this. (btw if you dont get tango evelynn you're a filthy casual (loljk))
7. Lich Bane
If you feel like mainly being a caster and they have like no mr (must meet both requirements) but for real this is a good pick cuz of the spellblade passive for melee/caster champions (it should be higher on the list)
8. Rod of Ages
If it's mid game and u wanna be weird make sure 2 switch it before 30 min though : ) (im just fkn kidding dont get this item it's crap) (jk)
9. Frozen Mallet
Extra AD and hp against hybrid damage or hard penetration from the enemy carry
10. Randuin's Omen
Strong for cases where you'd get frozen mallet but the enemy carry is heavy attack speed so you could use the extra def and passive over 30 ad or if they're not heavy attack speed but you could still use extra def and passive to reduce attack speed to 0.2 over 30 ad
Example Full Build Endgame (My personal fav against apc, was strong against Ahri carry before she got nerfed):

Jungling like an op:
Rule #1 Always start krugs or gromp, whichever bot lane is, 
it at the start of the leash to get the buff against that monster and to ensure that the bot lane doesnt steal your lv 2 exp.
Rule #2 If the enemy jg is 
, ff start blue buff hard leash no and immediately go to red buff it then krugs then back. If you want to blue then use both hp pots right after blue and go to red still, then krugs but you might have to kite it a bit cuz you didnt red for hp. BUT ALL THE WHILE BE WARY OF AND TELL YOUR LANES BE CAREFUL EXISTS SO BE CAREFUL. IS EVIL!!!!!
Rule #3 After krugs or gromp go to the corresponding buff, red or blue. After that go to wolves, ALWAYS go to wolves third and them, if you're feeling lucky you can go to the second buff instead and if you're scared it might get stolen.
Rule #4 If you get invaded, run away, if you live then back. Come back to your camps and improvise your clears to like lv 4 if you were able to get lv 2 at first camp.
Rule #5 be a fkn ninja and make those camps wish they never existed
Ganking:
RULE #1 FOR GANKING:
DON'T GANK LOSING LANES!!!!
now i know if you're in normals or low elo (i am) they're gonna flame you for not ganking their lane. Ahri 0/3/0: dood eve gank my lane i need help bro D:, or Ashe 0/2/0 DOOD EVE U SUCK GANK MY LANE OR IM AFK, just... just dont listen to these people. THE ONLY REASON YOU'D GANK A LOSING LANE IS IF YOU ARE 100% SURE YOU CAN ENSURE THE KILL. but you're not vi so idk about that. if your laner and the enemy laner are both like 15% hp try for it but for real dont do it unless you know you can kill, there are better lanes to be ganking. If all your lanes are losing, afk you're not gonna win u fkn skrub. reallu y tho they dont have the kill potential themselves, they're behind and the enemy laner has a kill or two so if you are 0/0/0 and both laners are 15% no lie this could result in enemy laner double kill unless you ult like a pro and kill but to reiterate:
85% OF THE TIME YOU WILL NOT GANK LOSING LANES JUNGLING 101, IT NEVER WORKS AS EVE THEY WILL JUST FLAME YOU MORE AFTER YOU FAIL TO SUCCESSFULLY GANK.
Now, even though eve is invisible, it's not the easiest to gank on her, you gotta have THE SKILLS. When going in for a gank, the first thing you want to be thinking is "what can I really do here?", if your answer is not much maybe you shouldnt be there. Always look for overextended lanes first because these are the easiest to gank. Imagine you're red team and are about to gank bot lane, enemy team is just a bit extended past the middle of the lane, but if you go in through river they'll see you, you can go through their tri bush and run in. If it's not overextended but you're confident you can do something for whatever reason cuz u have ult or the enemy laner is dedicated or whatever, go for it.
Actual Ganking:
Once you're in, run in behind the laner, as soon as they can see you press w and them with stalkers if you have it, go in with e q ken combo, you always want to press w when going in because often times people will be able to run away and your e attack speed bonus will go to waste, but w movement speed burst will allow you to basic attack, they run but you're faster catch up basic attack again and what not, wait for them to flash or something THEN use ult, but dont wait too long cuz they might get away if flash is down or they're saving it for just that cuz they read this guide too. You can gank before 6 but unless there's an overextended lane or you're feeling like you can counter jungle the enemy jungler, keep farming cuz you dont want to try to gank and not end up doing anything so you just fall behind and take exp from the friendly laner.
TlDr:
Overexteded Lane? Go in from behind, e q stalkers ult, they're ded.
Wanna gank before 6? Do it if overextended lanes, if not counter jg if you think you can, if not FARM so u dont become a useless scumbag
