So, I know that attack move attacks the closest thing next to you. I know you use is to check bushes, but I've heard it can be used to farm. I'm just wondering why you'd do that since you will be trying to last hit and the closest minion isn't always the lowest. Also, is that all it can be used for?

Easy as fuck kiting. 
Late game farming as an adc I'll occasionally just attack move way down a lane and focus my attention on things happening elsewhere on the map, since at that point I one or two hit most minions anyway and have enough attack speed that I'll probably get most of the cs without actively putting in last hit efforts. Those who may have built something like a static shiv are also prone to get away with it. Manually last hitting is probably slightly better, but at that stage of the game I'm usually more interested in just pushing the lane.
Kalista kiting is much easier with attack move although last hitting with attack move is still a mess. Better kalista players than I might be able to position their hops such that the closest minion is the one they want to last hit though.
I'll also attack move when in skirmishes with any champion that become untargetable for whatever reason. This included champs going into brush so they're untargetable until I get vision in the brush, but also when trying to deal with yi's q or zed's ult, or even champs coming freshly out of zhonyas so that I can get my shot(s) in ASAP to hopefully kill them before they have a chance to make a get away (or kill me). (Obviously this doesn't work so well if theres minions around at the time or multiple enemy champs.)
I don't ever use it to farm... basically just when kiting or bush checking or team fight stuff.
I honestly don't use attack move very much unless I play kalista lol. I like to right click to move then a + left click to kite lol.
Always use attack to move when kiting. Fuck, even a support build Sona's AAs matter
