So I'm pretty new to the game and I recently started playing the reworked Sion. I can play decently with him and end up not totally embarrassing myself. Any other Champions like Sion I can play with ?

If you mean tank/fighters with simple kits, like Sion, suggest Pantheon, Garen, Nautilus, Cho'gath, and Renekton.
If you're looking for ones that might fit a similar juggernaut niche, I'd recommend 
So how do you build him? AD, or tank? I have even seen AP Sion so...he has a lot of options. Let's assume you build him bruiser. You could pick champions such as 
. You have a lot of options, I'm just not sure exactly what you want. If you want easy, pick Garen, Vladimir, Xin Zhao, Vi, or Irelia(they seem "easy" to me, not sure about other thoughts).
