What do you guys think of maining one champ the whole season. Ex Ranked, you main Jinx Adc, and you dont get adc, auto dodge bc you didnt get it . Its an alt and i just want to master a champ , so this is fine right?

Don't dodge, just play them in a different role.
Main team builder if you do this. Also, you will get insanely good as that champ. Though my friend refers to it as the one month challenge. I did this with tristana
So what do you do when said champion gets nerfed or becomes a perma-ban?
I think the best strategy is to have a small-medium champion pool and to focus on champions in your pool that are strong in the meta at the current time.
If you're on an alternate account - treat it the same? Not sure why it makes a difference, if you're not taking it seriously and just want to get good at that one champion play teambuilder?
