Those interactions indeed are still canon. The written lore you read is an incomplete storyline to the champions in League of Legends. There is no day-to-day record of each champion's life.
Because there are interactions between champions as such, that means they have crossed paths at some point or another.
Riot wouldn't just throw in voice lines to have champions talk to each other like they know one another, if they have never met before nor heard of the other's reputation.
When you bring skins into the picture, that is when it is no longer canon.

Why would Taliyah ever go to zaun, a city of metal, not earth? When Why would Jhin talk to katarina or anyone else? He's a sniper, he wouldn't be talking to his victims. Those things are only there because it makes for interesting ineractions.
Oh, and when would Camille have not only gone to mount targon but also met with their secret space dragon?
