See title! We have all these different shop keepers on every map. During the harrowing we also had that pumpkin headed guy on twisted treeline (or is he always there?).
Anyways, with the inclusion of the new yordle like lady that rides the giant moose bison... elk.. cow.. thingy and the walrus pirate who are all these characters and what are their names and background?

I swear to god, Brann, if you push any red buttons...
The yordle lady and the walrus/otter/seal gentleman I suspect are traveling merchants, judging by the way the former has her shop centered on her beast of burden and the latter sells right out of his airship. Considering the things we purchase from these enterprising individuals, ie. every item in game, I would not be surprised if they traveled the world, collecting the odd trinket or forgotten relic.
If you recall, in Veigar's lore he joined a band of Bandle City merchants to see the world, I imagine our new yordle lady has similar motivations, and is significantly more successful in that regard. How she does not go mad from isolation, I have no idea. Perhaps she visits Bandle City/population centers frequently enough to stave off insanity. She's an independent yordle woman that don't need to put down no roots!
Now for red side's shopkeeper, he looks odd, to put it lightly; we have never seen anything like him before. Is he a giant freak of a yordle, an intelligent otter - hello Rengar, Rammus, new animal buddy for you - a magic ritual gone horribly wrong? I cannot say. What we do know is that he possesses an airship and can operate/maintain it, suggesting a sophisticated and intelligent individual. Heck, he even has a monocle!
In short, we likely will not know much until a Rioter steps in to clarify details or the shopkeepers' predicted voice-work is implemented.
When they do though, I hope both have an intense, ridiculously serious, and melodramatic rivalry over selling things.

I do believe that "Mr. Spooky Pumpkin Head" is a yordle, maybe Wriggle 
(because the first design of the lantern is on his shop.
The old Shoopkeeper is a manbaconian acording to Shurelia (ex member of Riot)
The Yordle Shoopkeeper may be an old scout of the mothership due his googles.
And the new ones... idk
Maybe the red one is a friend of urf
