Why does Riot retcon alot of there works?

Recently I saw that lux got a new VO that implies her and ezreal never met. Yet many quotes from champions, and even events from the past tell a different story.
If I even recall correctly, it was stated that ezreal has been all over runetera, and even visited demacia a few times. Making it hard to believe him and lux never had a conversation.

But this is not the first time riot has done this to reworked champions or biographies. ( I remember the victor fiasco a few months back. ) poppy herself went from somewhat intelligent to a bit on the... umm ... how do I say it politely? derp side?. (similar to galio)

Is it hard to keep champions consistent?

Uhm what would you consider "many"? Because there was only one. And that was the picture of ezreal and Lux that was shown during the aatrox release(which was before the big retcon)

Also Ezreals new lore paints him as less experienced,so he likely wasn't everywhere(at least not yet) and even if he was in demacia, you have to keep in mind that demacia is an entire kingdom and that Lux is a noble. Common folks will rarely interact with nobles, especially if they aren't even demacian.

And overall it might not be hard to keep a champ consistent, but why keep the old if you can replace it with something better?Riot deemed Poppys old character as too unappealing/uninteresting/not outstanding enough/too limited(or any combination of the 4),which is why she was changed. If you agree with their decision is of course another matter.

It is when you retcon the entire lore and make a new one.
