New Splash Art
Am I the only one who wishes they could keep the old splash art and be able to swap between the new and the old?

That would be a great idea since a lot of people want the old one back like the Ahri splash, and then there's people that actually like the new one that aren't just saying they like it to piss off Ahri players. This way, everyone wins.
There is very little benefit to doing this, as just about every splash art updated is uncomparably better than the old one, with the only exception being Ahri's splash and Janna's splash.
And even if you could swap splash arts, you would only see the splash art when viewing the champion out of game and during the loading screen if you don't use a skin, as the champion portraits need to remain consistent for every game for gameplay clarity.
No, new is the way to go.
