All champions are revealed when finished. I'd like to see the process of creating in real time (photos every week...)
It would make the designers pick up good ideas from the community (because they see the work and the progress).

The main reason is that they hate to say they're planning on introducing something then letting people down if those things don't happen. Also, can you IMAGINE the endless complaining about literally every aspect of every champion for months on end? Finally, the hype train doesn't run forever, and revealing everything bit by bit would probably cause it to die before release and hurt their sales.
The thing is that sometimes concepts don't work out that well and get put on ice or cancelled altogether. They previewed Aurelion Sol when he was still really early in development(named Ao shin back then),but afterwards they ran into several problems,causing him to be delayed for years.

Didn't they used to ave a time lapse presentation with new champs splash arts or something until season 4?
