katarina vs tanks?
ik kat isn't very good against tanks and hard cc, but any tips at all to deal with tanks as katarina besides building magic sorc boots and void?

I'd suggest avoiding them; purposely using teammates as body guards or distractions so you can get to a more fragile target unobserved. Against an entire team of tanks? Torment & nomicon.
Don't pick Kat into tanks
I have few suggestion:
- If you ask about itemisation, I specially created small minigame to make you choose right build. See killmundo.ru (as my part of Dev Api challenge).
- If you are on SR (so not in Aram), both team have frontline and backline. If someone engage and tank is danger for your backline - then you deal with that tank by your entire team. Otherwise you engage and punish their squishy adc or support for misposition. So, you killed someone and then their tank is going to you. In that context "deal with tank" is actually mean "Run". You need kiting, ward-jump, flash etc..
- If you are 1 vs 1 on tank, like on splitpush, it all depends about your itemisation, farming etc. If you have same level/farm against Mundo or Rammus, (or Taric), you probably cant kill them. Go back and push other lane. Or kill someone if there is teamfight.
If you far ahead, and he only have 100-150 MR, and you have
Void Staff, 
Abyssal, 
that give you about 100-118 mpen. So your combo + ult will probably kill him. If he has CC, make sure not ult until he just used it. If your combo not enough 
or 
are make good damage (almost true damage with your mpen). - In most cases you'll better not deal with tanks. But if tanks only build armor (like 400 AR Rammus), and your entire team is AD, than actually it's your job to shut that tank, because he'll not expect you to focus him (He'll expect you suicidaly jump on backline of their entire team, and be dead). In this cases (found on reddit/katarinamains recomendations)
suits you well, because it give you nice sustain and good passive magic damage aura (with your magic penetration).
