Should I use my art pen on the contours of the head, body, ears, etc. or should I limit it to just the nose, tattoos, and irises.

Depends on the effect you want.
The more art pen you use the less realistic it'll look overall due to the art pen's sharpness compared to the watercolours.
Another option would be to use less watered-down tube watercolours for your outlines and a longish round yellow acrylic-hairedbrush.
