So, this is in all likelihood bothering me more than it should, but I've always been confused by the sizes of different champions. For example, do the champions themselves appear to be a larger size than normal due to the effects of being summoned? Or, if that isn't true, are the minions (looking at you, cannon minion) designed to be comically tiny? I looked around for a while, and I couldn't find the exact height of any one thing in the game. If I could know, say, how tall a minion is, I could compare the minion to a champion and determine their height by saying. This could be done by saying, "Ok, if [Champion X] is 3[Champion Y] in height, and [Champion Y] is 3 feet tall, then [Champion X] is 9 feet tall."

I know this might seem like a stupid thing to overthink so much, but if anyone could help me figure this out to find the exact size of any one champion, I'd really appreciate it. Hoping Riot sees this, as I would really want a canon response.

I don't think there is any real lore-wise thought behind it and is more of a practical visual design decision. When you look at something like the initial LoL Trailer or other mediums, a lot of stuff is out of whack. Turrets, for example, have been previously depicted as being several stories high. But if the turrets were any larger or minion comparable in size to champions you'd start having issues of flat out not seeing your own champion and have trouble discerning things like animation ques for abilities and traps. That being said, the newer content like Howling Abyss seems to be slightly better in that regard.

Doesn't matter as long as we can all agree that a 6-stack Cho'Gath is flippin' ginormous.

A lot of older content tends to be smaller. Take a look at any given champion that's been visually updated and compare them to their old model, you'll probably observe them grow in size. Howling Abyss is another good indication of this: Cho'Gath dwarfs the towers on Summoner's Rift, but Howling Abyss towers are much taller and more grand.

I think they do this because bigger, more detailed models are generally nicer.
