What determines matchmaking in normals?

Didn't know where else to ask. If you look at my match history and see the ezreal game I lost, I was up against 3 gold 5s and my team were mostly silver 5. I am unranked. I have never played ranked before. This is the first time I am matched against such high rank players and despite the fact that I lost,I find it a fun challenge and good practice. I want to know how the normal system works so that I make match ups like this more frequent. Is that even possible?

Normals matchmaking rating (MMR) and Ranked MMR are separate, so it doesn't matter what rank a player has when he plays Normals.

Because of this, you'll often see a wide variety of Ranks in the same Normal game. For the most accurate matchmaking experience, you'll want to play Ranked. That's basically why Ranked exists.
