What do people mean when they say "Gank"

I assume it means 2-1 but no one ever uses it that way

While CLG Eart is technically correct, gank also is synonymous with "ambush" and is generally used when referring to the jungler appearing in a lane and attacking the enemy laner with his ally laner. That's the "2-1" that you probably understood. Ganks usually fall on the jungler's job, but mid lane is also designed to allow the mid laner to roam and "gank" the side lanes as well.

Basically refers to when you attack an enemy of another role on the team when you aren't supposed to be their opponent. This "attack" usually isn't expected, hence why it can be called an "ambush"

gank is a slang term that had its origins in MMOs where it was referred to as "gang-killing" where multiple players would attack a single opponent. As MMOs evolved, so too did the term. Now it generally means attacking an opponent while having a great advantage, such as more members; extremely higher level character, better items; etc.
