But to provide a short answer to your question, it allows you to keep your mouse in front of you while running away so you can autoattack without moving your mouse from in front of you to behind you repeatedly. Additionally, it allows you to attack enemy champions as soon as you have vision of them without having to click on them. It's something that I've been trying to use a bit more, but I still find myself using right-click for most of my actions. :p
I think you're talking about kiting - this means weaving movement between auto attacks, Here's the explanation
Let's say you have 1.0 attack speed you're going to attack every second - now between the time for your next attack you can either move around (get further from someone chasing you or closer to someone fleeing) or you can choose to stay in place. Regardless you're still going to have to wait a whole second before your next attack.
Kiting is a mechanic especially needed on ranged characters as they can maintain their distance for a longer period of time from the melee champions trying to get in range to kill them.
