I'm a pretty good Zed and win lane most of the time (except when a dude went full tank Malphite mid just to counter me). He is my main and number 1 champ. But I have a terrible ranked win rate with him, because for whatever reason, everything around me crumbles when I decide to play him in ranked. Should I just drop Zed in ranked? Or how do I become better?

It might help to understand when to pick him v someone else. He's not that great in teamfight comps, and is poorly suited to siege comps. He excels in pick/splitpush comps though. Also consider that perhaps your macroplay may need work. If you're winning lane but not being able to convert that into a W, that is often a sign of issues with macroplay (or perhaps just teammates doing really poorly, but that won't happen every time as a matter of consequence of the Central Limit Theorem.)
you can keep playing Zed and figure out how to best win with him under different circumstances. learn to play against different champions, try different item sets, rune and mastery pages and even summoner spells. learn to play aggressive against some champs while playing passive against others. I have atleast 3 rune pages for Annie mid depending on matchups. etc.
