So I'm wondering if some champions are easier to aim spells at than others because they are visually larger, e.g would an Urgot or a fed Cho'gath have a bigger hitbox than a Teemo? If so, then wouldn't increasing champion size (like an Elixir of iron) make you a bigger target?

Yes, they have different hitboxes and riot even have changed them as buff/nerf a few times. Elixir of Iron, gargoyle plate and habilities like Cho ult make the hitbox bigger but it´s ok because they are for tanks and absorbing damage is one of their jobs.
Technically, yes; bigger targets are more like to be hit, but in the case of tanks, it's intended. It allows for more easier blocking of enemy attacks for the sake of allies. Not sure if it affects effectiveness of enemy AoE abilities, though.
