I've had success in all other roles but this one and I think it's because I'm trying to learn Caitlyn. I'm very timid around the front line because all it takes is one CC to land on me and it's over.
Very frustrating champion to play because she's just too passive.

Her E is a gap closer, as well as an escape. As are her traps when positioned properly. The traps are as reliable as the player using them, and as predictable as the enemy team potentially can be. In other words, if you know when and how to place them, you're more likely to have them activate.
As for her ult, it has situation success, like most.
It sounds like your issue is playstyle and perhaps build path if you're feeling she's weak. She's not in favor at the moment, but that doesn't mean a good Caitlyn can't be a terror if allowed to farm CS and get fed.
Just a suggestion, but 
fell out of favor on her. Try

instead. Perhaps you'll feel different then.
She's extremely strong atm
"Caitlyn is garbage" is never a bad thing when discussing overall game health.
She is garbage to play and play against.
